Most restaurant owners spend weeks comparing oven models and very little time checking whether the oven will actually fit their kitchen. The result is familiar: the oven will not pass through the doorway, the chimney has nowhere to go, or the floor was not built for the weight.

1. Choose the right oven type
Fixed brick ovens suit high-volume pizzerias and fine-dine restaurants. Brick ovens on wheels work well for open kitchens and busy cafés. Portable metal ovens suit catering and events, and countertop ovens suit compact cafés and cloud kitchens.
2. Plan the chimney and exhaust early
Wood fired and hybrid ovens produce smoke and hot flue gases that must be carried safely out of the building. Check the chimney route, the outlet position, your kitchen exhaust capacity and local rules on wood or charcoal use. If wood is restricted at your location, a hybrid wood + gas oven lets you cook on gas where needed and use wood where allowed.
3. Verify floor load and foundation
Brick ovens have high thermal mass, which is what gives them excellent heat retention, but it also makes them heavy. Confirm that your floor, platform or terrace can carry the load, especially on upper floors and rooftops.
4. Measure the full delivery path
Check the main gate, lane width, stairs, lift, corridor turns, doorway width and ceiling height. For large projects, brick ovens can also be built on-site, which avoids access problems.
5. Leave working clearance
Your team needs room to load and rotate pizzas, handle fuel and clean the oven safely. Keep combustible materials, shelves and wall finishes away from hot surfaces.
6. Plan your fuel setup
Wood needs dry, seasoned hardwood storage. Gas needs a proper LPG/PNG line and safe cylinder placement. Hybrid ovens need both, so plan space for each.
7. Match capacity to peak hours
An oven that fits the room but cannot keep up with your rush hour will hurt sales. Choose the size based on your busiest hours and future growth, not only budget.
